So last week I made these Chocolate Peppermint Cookies. Great Recipe! Hint: really crush up the candie canes otherwise your cookies can get super sugary. And the recipe says that you have to keep the dough in the fridge for two hours or overnight. Ha! I always forget to prepare for that so I put it in the freezer for 10 mins. I actually put half the batch in the fridge overnight and it didn’t make too much of a difference in texture or taste.
But I did realize that the peppermint candy canes were a bit too much. So I mixed in some fresh mint instead. It has a very light flavor! I suggest it if you feel peppermint is too strong.
This recipe also inspired me to spin off of it and make vegan banana chocolate walnut cookies… coming up in my next post! or mexican chocolate by using the same chocolate cookies recipe and adding some cinnamon and pepper flakes.
